For a smooth cut, use razor blades. You can get them in a box of 100 at a hardware or paint store. Use two passes to cut each sheet. First pass through the sponge, second pass through the topsheet. Use 1 razor blade per rubber sheet. Imperfections (you wont have any if you did the preceding) can often be smoothed out with some 100 grit sand paper. They make handles for the razor blades but I usually just hold the blade with my hand unless I have to do more than a couple bats. If you need to do a lot the handle is nice because your fingers will get sore and tired from holding the blades.
