I understand the flow of the game issue as I face that myself against kids who hit every ball they can reach.

I think what you should try is focusing on making you set the flow.

Stick to careful short serves that your opponent has to push or flip weakly so that you can attack the return with your forehand. Don't give them serves that let them open the attack and establish the flow.

When they serve, attack anything that doesn't double bounce. They will have to defend and you get time to keep attacking.

If they short serve, try to short push right off the bounce so that they themselves are facing a short low ball. Typically, they will push it too long so that you can attack or they will rush and flip into the net.

Try not to give them a short high ball. Opponents usually can be counted on to handle these reasonably well.
