I practice a lot of different serves just because:

a) They're a productive thing to practice when you don't have a partner and

b) I find them fascinating.

I think as you go up the emphasis becomes setting up the 3rd ball. Perhaps one of the trickiest is the inside-out pendulum with top/back variation.
