I think you can use any varnish you like, I tend to use what ever I have left in the shed. As for the amount, I always give it at least 3 coats, But wire wool it between them, for a perfect finish. Although I have heard that to much varnish does something to the feel off the blade, I have never found this to be the case. I have been using this formula for at least 15 years and have never noticed any difference between varnished and unvarnished blades. The advantage is that the blade will last a lot longer.
