with regards to his sidespin serves,always slice the ball in the opposite direction in your return so that the spin of the oncoming ball will not stick to your racket(when i say opposite, i assume that you are facing your opponent).you can add underspin to the sidestroke return to add safety to your return shot.this will make looping it back a little bit harder.as for his long underspin shot,you can loop it rightaway if you are very comfortable in looping underspin.if not, i advise you for more underspin push return in his weak side,wait for the right opportunity to attack,this will also force him to attack the ball off balance,making it a low percentage succes shots.i also advise you to master looping underspin balls,this is the key to defeat this kind of opponent.
