I'd recommend shying away from the Gatien Offenssive blade - it is a fine blade, just not really optimal for a defender.

I don't actually have any experience with the Kalinic light, but know several good, fairly defensive minded, players that use the regular Kalinic to good effect.

Either rubber should be OK, but go with thinner sponge (I'd recommend 1.5mm, or possibly even 1.0mm depending on how much chopping you do.) Note that both rubbers are quite grippy - if you can't accurately judge your opponent's spin, they could be a challenge.

If you are a beginning to intermediate player, something less spinny and a bit slower might be in order - perhaps Yasaka Original, Donic Liga, Juic Hirubia, and the like...

These will increase your margin of error when you misjudge spin, and will still produce very spinny chops.
